This skillet-baked chocolate chip cookie is gooey, warm and indulgent. All you need is a few ingredients and it’s so easy to put together as there aren’t many steps. Top with vegan ice-cream for a truly decadent treat!

Ingredients you’ll need for this Skillet Cookie:

This Gooey Skillet Cookie could not be more simple with the following ingredients:

  • vegan butter
  • brown sugar
  • flaxmeal (ground flax seeds) + water
  • plain flour
  • baking powder
  • baking soda
  • vanilla extract
  • dark chocolate (make sure it’s vegan!)

How to make Gooey Skillet Cookie:

  1. Create flax-egg.
  2. Mix melted vegan butter, vanilla extract and flax egg.
  3. Add flour, baking soda, baking powder, brown sugar and give it a little whisk.
  4. Fold in the dark chocolate. Save some to press into the cookie on top, for decoration. (If you care about those things!)
  5. Bake for 30 – 35 minutes.
  6. Enjoy!

How to Store Skillet Cookie:

If you somehow don’t finish this whole cookie (I highly doubt that’s even possible), store in an air-tight container and finish within 3 days. Make sure to warm it up before topping with vegan ice-cream!

Ingredients

Units Scale
  • 110 g vegan butter (1/2 cup)
  • 150 g plain flour (1 1/3 cups)
  • 130 g brown sugar (2/3 cup)
  • 1 tbsp ground flax seeds
  • 2 tbsp water
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 150 g vegan dark chocolate (chopped)

Instructions

  1. Pre-heat oven to 200C/180C fan. Grease 8-inch skillet with vegan butter.
  2. First mix the ground flax seeds with water. Set aside for 5-10 minutes.
  3. Melt the butter, then combine with vanilla extract and flax egg.
  4. Combine all dry ingredients with the wet.
  5. Fold in 3/4's of the chocolate.
  6. Pour the cookie dough into the skillet and press the remainder of the chocolate on top.
  7. Bake for 30-35 minutes.
  8. Allow to cool slightly, then top with vegan ice cream. (I used salted caramel)
  9. Enjoy!
