Ingredients

  • 1 cup cashews
  • 1/2 cup chickpea flour ((besan/gram flour))
  • 3 tbsp rice flour
  • 1/4 tsp salt
  • 1/4 tsp chaat masala
  • 1 tsp chilli powder
  • 1/2 tsp garlic granules
  • 1/8 tsp ground turmeric
  • 1/4 tsp baking soda
  • 34 fresh/dried curry leaves (chopped)
  • 1 tbsp olive oil
  • 23 tbsp water

Instructions

  1. Pre-heat oven to 200°C/392°F and line a baking tray with parchment paper.
  2. Mix cashews with all the dry ingredients and chopped curry leaves. Add the oil and toss it together.
  3. Add 1tbsp of water at a time until the mixture starts to clump up – I used a total of 3 tbsps. Transfer onto the baking tray, separate cashews that have clumped together.
  4. Bake for 10 minutes, give it a mix and bake for 5 minutes more. Turn off the oven, with the cashews still inside but the door ajar for 2-4 minutes. Remove cashews and place them onto a cooling rack.
  5. Enjoy!
