First make the pear puree by adding the vegan butter, chopped pears and brown sugar into a pot. Cook on low heat for 8-10 minutes or until the pears become soft.
Allow to cool slightly then blend until smooth (its okay if there are a few bits).
Pear Cake
Pre-heat oven to 180C/160C fan and line a 8 inch square baking dish with parchment paper.
Make vegan buttermilk by combining oat milk and apple cider vinegar. Allow to rest for 5-10 minutes.
Then add olive oil, pear puree, vanilla extract and light brown sugar.
In another bowl combine self raising flour, rolled oats, baking powder, baking soda, salt and the spices.
Pour wet ingredients over the dry and mix until well combined.
Transfer cake mix into prepared baking dish.
Tap the cake on the counter a few times to release any remaining air bubbles and allow them to rise to the surface.
Top with rolled oats and a few sliced pears, then sprinkle brown sugar over the pears.
Bake for 45-60 minutes or until skewer/knife comes out clean when you insert it into the cake.
