VEGAN PUDLA SANDWICH

Ingredients

  • 1 1/2 cups chickpea flour
  • 1/2 tsp ground turmeric
  • 1 tsp chilli powder
  • 1/2 tsp pink salt
  • 12 green chillies (chopped)
  • 1 tbsp chopped coriander
  • chopped tomatoes (peppers, onions, purple cabbage)
  • chaat masala
  • bread
  • vegan butter
  • vegan cheese
  • more chopped coriander

Instructions

  1. Mix chickpea flour, ground turmeric, chill powder, chillies, coriander
  2. Add water in small amounts and mix until you get a semi-thick batter
  3. Dip bread into the batter + place 2 bread slices onto a heated non-stick pan
  4. Add chopped tomatoes, peppers, onions, purple cabbage on top of both bread slices
  5. Lightly press veggies into bread + cook for 1-2 mins on medium heat
  6. Grease pan with vegan butter
  7. Carefully flip the slices and allow to cook for 2-3 mins on medium heat
  8. Flip once again and sprinkle chaat masala, chopped coriander and a slice of vegan cheese
  9. Close the sandwich and cook until crispy / vegan cheese has melted!
