Description
These baked masala cashews are a crowd-pleasing, delicious and dangerously simple Indian snack. Made with a few pantry ingredients, these crispy Indian spiced nuts can be whipped up within 20 minutes! Oh, and they're naturally vegan, gluten-free and healthy!

- 1 cup cashews
- 1/2 cup chickpea flour ((besan/gram flour))
- 3 tbsp rice flour
- 1/4 tsp salt
- 1/4 tsp chaat masala
- 1 tsp chilli powder
- 1/2 tsp garlic granules
- 1/8 tsp ground turmeric
- 1/4 tsp baking soda
- 3–4 fresh/dried curry leaves (chopped)
- 1 tbsp olive oil
- 2–3 tbsp water
Instructions
- Pre-heat oven to 200°C/392°F and line a baking tray with parchment paper.
- Mix cashews with all the dry ingredients and chopped curry leaves. Add the oil and toss it together.
- Add 1tbsp of water at a time until the mixture starts to clump up – I used a total of 3 tbsps. Transfer onto the baking tray, separate cashews that have clumped together.
- Bake for 10 minutes, give it a mix and bake for 5 minutes more. Turn off the oven, with the cashews still inside but the door ajar for 2-4 minutes. Remove cashews and place them onto a cooling rack.
