Description

Vegetable Pulao – a one-pot Indian rice recipe made with an aromatic of spices and a few vegetables. Make this Indian Vegetable Pulao recipe in under 30 minutes, and enjoy warm with my Authentic Chana Masala recipe! Indian vegan food for the WIN. 


Ingredients

Veg Pulao

  • 1 cup Basmati rice
  • 1/2 tbsp cumin seeds
  • 56 curry leaves
  • 2 green chillies (sliced lengthwise)
  • 1/4 cup split cashews
  • 1 small onion (diced)
  • 2 small potatoes (diced)
  • 1 small carrot (diced)
  • 1/2 tsp turmeric
  • 1 tsp pink salt
  • 1/2 cup petits pois (small peas)
  • 1 3/4 cup water

Instructions

Pulao Rice

  1. Wash and soak basmati rice for 30 mins in cold water, then drain.
  2. Heat 1 tbsp oil over medium heat. Add cumin seeds,cook until fragrant.
  3. Add curry leaves, green chillies split cashews and stir.
  4. Add onions, saute until translucent.
  5. Add potatoes and carrots and cook for 1 minute.
  6. Add soaked rice. Cook for another minute, stirring often.
  7. Add turmeric, pink salt and petits pois (small peas).
  8. Stir until well combined. Pour in the water, then bring to a boil. Cover the pan with a lid, turn the heat down low and cook for 10 minutes.
  9. Turn off the heat and rest for another 10 minutes. Do not remove the lid.
