Description

This vegan Moringa Drumstick Curry, is an athentic Indian curry and a perfect healthy dinner for the family.


Ingredients

Boiling Drumsticks

  • 45 cups chopped moringa drumsticks
  • 1/4 tsp salt

Moringa Drumstick Curry

  • 2 tbsp oil
  • 1 cup gram flour
  • 1/2 cup canned chopped tomato
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tbsp grated garlic
  • 1 1/2 tsp salt
  • 1/4 tsp ground turmeric
  • 1/2 tsp chilli powder
  • 1/2 tbsp coriander cumin powder (or half of each)
  • 2 tbsp chopped fresh coriander
  • 1 tsp sugar

Instructions

  1. In a pot add cold water, moringa drumsticks and salt. Boil for [timer minutes=8] 8-10 minutes[/timer]. (Don't drain the water!!)
  2. Roast the gram flour in a pan for[timer minutes=5] 5-7 minutes[/timer]. Constantly mixing.
  3. In another pan heat oil over low-medium heat.
  4. Once oil is hot add mustard seeds and temper until they start to pop.
  5. Add cumin seeds and cook until fragrant.
  6. Add grated garlic and cook for a few seconds.
  7. Mix in chopped tomatoes, salt, turmeric, chilli and coriander cumin powder. Cook for [timer minutes=5]5-6 minutes[/timer].
  8. Add the boiled moringa drumsticks without the water. Mix, then cover pan with a lid and cook for 3 minutes.
  9. Pour 1 cup of the moringa boiled water into the pan and sugar. Cook for another [timer minutes=3]3 minutes.[/timer]
  10. Sprinkle gram flour over the curry (don't mix). Cover pan with a lid and cook for [timer minutes=4]4-5 minutes[/timer].
  11. Add fresh coriander. Mix and cook for [timer minutes=9]9-11 minutes[/timer] with the lid on. Stirring occasionally.
