Turnover
- 1x320g puff pastry sheet
- 2-3 granny smith apples (around 340g)
- 55 g light brown sugar (1/4 Cup)
- 1 tbsp vegan butter
- 1 tbsp plain flour
- 1/2 tsp ground cinnamon
Glaze
- 1/8 tsp ground cinnamon
- 1/2 tbsp vegan butter
- granulated sugar (to sprinkle on top)
- Peel and cut the apples into cubes. Add them into a bowl filled with water and a squeeze of lemon juice to prevent browning.
- Melt vegan butter over medium-low heat.
- Drain the the apples, add them to the pan and cook for 3 minutes.
- Add cinnamon and brown sugar and cook until apples become softer. Around 5-7 minutes.
- Mix in the plain flour and cook for another 1-2 minutes.
- Pour apple filling into another bowl and cool completely.
- Take out the puff pastry 5-7 minutes before needed.
- Cut the puff pastry sheet into 6 squares.
- Add around 1 heaping tablespoon of the apple mixture in the middle of each square.
- Take one corner of the pastry and fold it diagonally over the apple filling to form a triangle.
- To seal dip a fork into some flour and then use to press the edges together. Keep dipping the fork into the flour if the pastry starts to stick onto the fork. (see video)
- Preheat oven to 200°C /180°C fan
- Place turnovers onto a baking tray lined with parchment paper and refrigerate for around 45 minutes.
- For the glaze melt butter and mix in the cinnamon.
- Generously brush each turnover with the glaze, create 3 slits to allow air to escape and sprinkle some granulated sugar on top.
- Bake for 35-45 minutes or until golden.
- Allow to cool slightly.
