It’s finally September! Which means more delicious recipes including one of my favourite spices…. CINNAMON! Here’s a delicious and extremely easy recipe for my apple turnovers!

Ingredients you’ll need for these Turnovers:

These vegan apple turnovers could not be more simple with the following ingredients:
 

  • plain flour
  • store bought puff pastry 
  • ground cinnamon 
  • granny smith apples
  • vegan butter
  • light brown sugar
  • granulated sugar

How to make these Vegan Apple Turnovers:

  1. Peel and chop apples. Soak in lemon water until needed.
  2. Melt butter.
  3. Drain apples and add them to the pan cook for a few minutes.
  4. Add brown sugar and cinnamon and cook until apples become softer.
  5. Add plain flour and cook for a few more minutes.
  6. Allow mixture to cool.
  7. Cut pastry into 6 squares and add some of the apple mixture.
  8. Seal the pastry and refrigerate for 45 minutes or until needed.
  9.  Melt butter and mix in cinnamon. Glaze the turnovers and sprinkle some sugar on top.
  10. Bake! Cool slightly before eating as they will be very hot!

How to freeze Apple Turnovers:

If you want to make them ahead and bake them another day you can! Just place the un-glazed turnovers into the freezer on a baking tray and once they’ve completely frozen you can place them into a air tight container or a freezer bag. The turnovers can be baked straight from the freezer but don’t forget to glaze them before!!! And they might take longer to bake!

Ingredients

Turnover

  • 1x320g puff pastry sheet
  • 23 granny smith apples (around 340g)
  • 55 g light brown sugar (1/4 Cup)
  • 1 tbsp vegan butter
  • 1 tbsp plain flour
  • 1/2 tsp ground cinnamon

Glaze

  • 1/8 tsp ground cinnamon
  • 1/2 tbsp vegan butter
  • granulated sugar (to sprinkle on top)

Instructions

  1. Peel and cut the apples into cubes. Add them into a bowl filled with water and a squeeze of lemon juice to prevent browning.
  2. Melt vegan butter over medium-low heat.
  3. Drain the the apples, add them to the pan and cook for 3 minutes.
  4. Add cinnamon and brown sugar and cook until apples become softer. Around 5-7 minutes.
  5. Mix in the plain flour and cook for another 1-2 minutes.
  6. Pour apple filling into another bowl and cool completely.
  7. Take out the puff pastry 5-7 minutes before needed.
  8. Cut the puff pastry sheet into 6 squares.
  9. Add around 1 heaping tablespoon of the apple mixture in the middle of each square.
  10. Take one corner of the pastry and fold it diagonally over the apple filling to form a triangle.
  11. To seal dip a fork into some flour and then use to press the edges together. Keep dipping the fork into the flour if the pastry starts to stick onto the fork. (see video)
  12. Preheat oven to 200°C /180°C fan
  13. Place turnovers onto a baking tray lined with parchment paper and refrigerate for around 45 minutes.
  14. For the glaze melt butter and mix in the cinnamon.
  15. Generously brush each turnover with the glaze, create 3 slits to allow air to escape and sprinkle some granulated sugar on top.
  16. Bake for 35-45 minutes or until golden.
  17. Allow to cool slightly.
  18. Enjoy!!
