Avocado Strawberry Spinach Salad with Balsamic Poppy Seed Dressing

Ingredients

Balsamic Dressing:

  • 1/4 cup Balsamic vinegar
  • 3 tbsp olive oil
  • 1 1/2 tbsp poppy seeds
  • 1 tsp dijon mustard
  • 1/2 tsp salt (or to taste)
  • pinch of black pepper

Salad:

  • 3-4 cups sliced strawbere
  • 1 avocado, cubed
  • 1/2 cup vegan feta
  • 6-8 cups spinach
  • 1 red onion, thinly sliced

Instructions

  1. Balsamic Dressing: Add balsamic vinegar, olive oil, Dijon mustard, poppy seeds, salt, and black pepper to a small bowl or jar. Whisk or shake well until fully combined and slightly thickened. Taste and adjust seasoning if needed.
  2. Assembly: Add baby spinach to a large bowl, then top with strawberries, avocado, vegan feta, red onion, and pecans. Pour over the dressing just before serving.
  3. Serve: Gently toss everything together until evenly coated and serve immediately for the freshest flavour and texture.
