Balsamic Dressing:
- 1/4 cup Balsamic vinegar
- 3 tbsp olive oil
- 1 1/2 tbsp poppy seeds
- 1 tsp dijon mustard
- 1/2 tsp salt (or to taste)
- pinch of black pepper
Salad:
- 3-4 cups sliced strawbere
- 1 avocado, cubed
- 1/2 cup vegan feta
- 6-8 cups spinach
- 1 red onion, thinly sliced
- Balsamic Dressing: Add balsamic vinegar, olive oil, Dijon mustard, poppy seeds, salt, and black pepper to a small bowl or jar. Whisk or shake well until fully combined and slightly thickened. Taste and adjust seasoning if needed.
- Assembly: Add baby spinach to a large bowl, then top with strawberries, avocado, vegan feta, red onion, and pecans. Pour over the dressing just before serving.
- Serve: Gently toss everything together until evenly coated and serve immediately for the freshest flavour and texture.
