These Coconut & Tahini Oatmeal Cookies only take around 15 minutes to make! They’re vegan (obvi), but also gluten free and refined sugar free! But I promise you, they do not taste ‘healthy’ at all.
Eat these chocolate chip oatmeal cookies warm if you’re a fan of gooey desserts (like me!) or allow them to cool if you prefer slightly chewy cookies. Either way, you won’t regret giving this recipe a try!
What you’ll need to make Coconut & Tahini Oatmeal Cookies:
- rolled oats
- oat flour/ground oats
- vanilla extract
- salt
- coconut oil
- runny tahini
- unsweetened desiccated coconut
- coconut sugar
- maple syrup
- chocolate chips
- baking soda
How to make your own oat flour:
You don’t need any fancy flour to make these gluten-free cookies! Just add rolled oats into your blender and blend until the texture is similar to flour if your blender isn’t strong enough and you end up with a few chunkier pieces, this recipe will still work!
Also, please measure the oat flour/ground oats after it’s blended!
How to make Coconut & Tahini Oatmeal Cookies:
- Add your oat flour, rolled oats, coconut sugar, baking powder and salt into a bowl.
- Pour your tahini, coconut oil, maple syrup over the dry ingredients.
- Mix in your dark vegan chocolate chips.
- Using a tablespoon, scoop out some of the cookie dough.
- Transfer onto a pre-lined baking tray and bake for 8-11 minutes.
- Sprinkle with salt flakes and enjoy warm!
How to store:
Store in an air-tight container for up to 4 days.

Ingredients
- 74 g rolled oats
- 54 g ground rolled oats or oat flour
- 1/2 tsp baking soda
- 12 g unsweetened desiccated coconut
- 75 g coconut sugar
- 87 g vegan chocolate chips
- 1/8 tsp salt
- 63 g runny tahini
- 2 tsp vanilla extract
- 50 g coconut oil (melted)
- 37 g maple syrup
- salt flakes
Instructions
- Pre-heat your oven to 180C/160C fan.
- In a bowl, combine all your dry ingredients.
- Then pour in all your wet! Mix until well combined,
- Using a tablespoon scoop out the cookie dough. With your hand, press the cookie dough into the tablespoon, then carefully remove and place onto a pre-lined baking tray. Press the cookies slightly if you want them to be thinner.
- Bake for 8-10 minuets.
- Tap the baking tray 1-2 times on the counter to flatten your cookies slightly.
- Sprinkle salt flakes on top, and enjoy warm!
