Sprinkle with a little salt and black pepper.

Ingredients
- 4 large tortillas
- 4 vegan beef patties
- 8 vegan cheese slices
- 2–3 onions, sliced
- 4 tbsp oil
- 2–3 tomatoes, sliced
- 4–6 crisp lettuce leaves, roughly chopped
- 4–5 gherkins, sliced
Sauce:
- 1/2 cup vegan mayo
- 1/3 cup ketchup
- 2 tbsp yellow mustard
- 1 tbsp gherkin brine
- 1 tsp ground paprika
- 2 garlic cloves, grated
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions

- Caramelise the onions: Heat the 3 tbsp oil in a frying pan over low to medium heat. Add the sliced onions and a pinch of salt, then cook gently for 10 to 15 minutes, stirring regularly, until soft, golden and caramelised. Set aside
- Make the sauce: Add the vegan mayo, ketchup, yellow mustard, gherkin pickle juice, garlic, paprika, salt and black pepper to a bowl. Mix until smooth and creamy. Taste and adjust the seasoning if needed.
- Smash the burgers: Place a vegan beef style patty onto a tortilla and firmly smash it down with a spatula, spreading it across most of the tortilla. Press the patty into the tortilla so it sticks together. Sprinkle with a little salt and black pepper.
- Cook: Heat a little oil in a frying pan over low to medium heat. Carefully place the tortilla into the pan, patty side down. Cook for 2 to 5 minutes until the vegan beef is browned and crispy. Flip, top with vegan cheese over the patties, cover and cook over low heat until the tortilla side is golden, and cheese has melted.
- Add the cheese and toppings: Top with caramelised onions, chopped gherkins, tomato and lettuce, then drizzle generously with the homemade gherkin mayo mustard sauce.
