Making the pumpkin sauce…

Add the minced garlic and cook for another 30 seconds, just until its fragrant aroma fills the kitchen.

Add the pumpkin purée, paprika, cumin, salt, and black pepper. Stir everything together and cook for 2–5 minutes, letting the warm spices bloom and the pumpkin deepen in colour and flavour. You’ll notice the mixture becoming more fragrant and savoury as it cooks.

Pour in the vegetable stock and add the vegan cheese, stirring until everything melts together into a smooth, creamy sauce. Bring it to a gentle bubble, then reduce the heat and let it simmer for 5–10 minutes. Stir regularly, scraping the bottom of the pan as you go to keep the sauce silky and prevent it from catching.

As it simmers, the sauce will gradually thicken and become beautifully velvety. You’re looking for a consistency that coats the back of a spoon but is still loose enough to cling to every piece of crispy gnocchi. If it looks too thick, add a splash of vegetable stock and stir until smooth and luscious. The finished sauce should be rich, creamy, and wonderfully aromatic.

Let’s get that gnocchi golden & crispy…

Start by cooking the gnocchi according to the instructions on the packet, as cooking times can vary between brands. For mine, I boiled the gnocchi for about 2 minutes, or until the little pillows floated to the surface. Once they’re ready, drain them well and set aside.

Now comes the best part: getting those beautiful crispy edges! Heat a large skillet over medium-high heat and add the vegan butter. Once it’s melted and sizzling, add the cooked gnocchi, spreading it out so each piece has plenty of contact with the pan. Let it cook for a few minutes, tossing or stirring regularly, until golden brown and wonderfully crisp on the outside. You’re looking for that irresistible contrast between crispy, golden edges and soft, pillowy centres. Keep the gnocchi moving so it browns evenly without catching or burning.

Once the gnocchi is beautifully golden and crisp, turn off the heat and scatter over the fresh oregano. Give everything a gentle toss, letting the warmth of the pan release the oregano’s fresh, fragrant aroma. The result is golden, crispy gnocchi with a delicious herby finish, ready to be served with the creamy pumpkin sauce.

Final touches…

Now for my favourite part: making the dish look as good as it tastes! I wanted this cosy bowl of gnocchi to feel extra special, so I poured the warm pumpkin sauce into a wide, shallow serving dish. The beautiful golden orange sauce makes the perfect base for the crispy gnocchi.

Add a few little dollops of vegan cream cheese over the pumpkin sauce, then pile the crispy oregano gnocchi generously on top. Finish with a delicate drizzle of chilli oil for a glossy pop of colour and a gentle spicy kick. Finally, scatter over a few fresh oregano leaves for a fresh, fragrant finish.

  • 1 tbsp olive oil
  • 1x425g canned pumpkin puree
  • 1 onion, diced
  • 1 tbsp grayed garlic
  • 1 veggie stock cube + 2 cups water
  • 1 tsp paprika powder
  • salt + black pepper to taste
  • 1/2 cup grated vegan cheese
  • 1 x 500g pack gnocchi
  • 3 tbsp vegan butter
  • 2 tbsp fresh oregano
  • 2 tbsp vegan cream cheese
  • pinch cinnamon
  • 1/2 – 1 tbsp chili oil (optional)

Instructions

  1. Make the Pumpkin Sauce: Heat olive oil in a pan and sauté the diced onion until soft and lightly golden. Add the garlic and cook for 30 seconds until fragrant. Stir in the pumpkin purée, paprika, cumin, salt, and black pepper. Cook for 2 to 5 minutes, stirring occasionally.
  2. Make It Creamy: Pour in the vegetable stock and add the vegan cheese. Bring to a gentle boil, then reduce the heat. Cover and simmer for 10 to 15 minutes, stirring regularly. Add a splash more stock if the sauce becomes too thick.
  3. Cook the Gnocchi: Cook the gnocchi according to the package instructions. Drain once the gnocchi floats to the surface. Heat butter in a skillet over medium-high heat, add in the drained gnocchi. Cook until crispy.
  4. Add the Oregano: Turn off the heat and add the fresh oregano. Toss the gnocchi gently so the residual heat releases the oregano’s fragrant flavour.
  5. Assemble: Pour the warm pumpkin sauce into a serving dish and add little dollops of vegan cream cheese. Top generously with the crispy oregano gnocchi.
  6. Finish and Serve: Sprinkle ground cinnamon. Drizzle with chilli oil and garnish with fresh oregano. Serve warm while the gnocchi is golden and crispy.
