These vegan garlic asparagus puff pastry bundles are an incredibly easy, flavourful and elegant vegan asparagus recipe. Well-seasoned garlicky asparagus, gooey melted vegan cheese wrapped with flaky puff pastry. Perfect for Easter, Mother’s day or for brunch during Spring!

Ingredients for Vegan Garlic Asparagus Puff Pastry Bundles

  • Asparagus: the key to this recipe is this beautiful spring vegetable. Washed, and with stalks slightly trimmed off.
  • Puff pastry: using a sheet of puff pasty will make prepping this recipe super quick and easy. It’ll will be wrapped around the garliky asparagus. Any brand will do, just make sure it’s vegan!!
  • Garlic: a few cloves, grated. Just so we can get the most garliky flavour possible.
  • Vegan cheese: I like to use sliced vegan cheese as it makes this recipe even easier to prepare. Once baked it’ll become bubbly and perfectly melted.
  • Chilli flakes: the amount you use depends on your spice tolorence. You can also omit it if you like.
  • Olive oil: once tossed with the seasoning and asparagus, it’ll help keep our asparagus nice and juicy, but crispy on the outside.
  • Black pepper + Salt: because all recipes need a lil salt + bp!
  • Maple syrup: this will gift us with a beautifully golden pastry, and also add a needed hint of sweetness.
  • Oat milk: combined with the maple syrup, it’ll help us thin out that maple flavour and also help us achieve a crispy, golden pastry!

Making the garliky asparagus…

Start with washing the asparagus, then trim off a little of the stalk. A teeny tiny amount!


Add into a bowl, and pour over the olive oil. Add the black pepper, salt and chilli flakes. Grate garlic cloves directly over and then toss together until well-combined. I like to gently rub the seasonings into the asparagus using the tips of my fingers. Set aside.

Wrapping the asparagus with puff pastry…

5-10 minutes before using, remove the sheet of puff pastry from the fridge. This is important to do as it’ll be easier to roll out the puff pastry once it’s softened up slightly.

While that’s happenings, prepare the vegan cheese by cutting the 6 vegan slices in half.

Gently remove and roll out the puff pastry. Cut into 6 squares, place vegan cheese diagonally into each square, add a few stalks of asparagus, one more slice of vegan cheese, and a few more asparagus stalks. Now, tightly wrap the puff pastry around the asparagus. Repeat until you have 6 asparagus bundles.

Place on a baking sheet, and refrigerate for 5-10 minutes. While it’s in the fridge, we’ll make the super simple maple glaze. Just mix together oat milk and maple syrup.

Remove asparagus bundles, glaze with the maple oat mixture and then bake for 35- 45 minutes or until golden.

Serve warm as an appetizer, side or snack!

Can you make the puff pastry ahead of time?

You can do the prep of assembling the pastry together and pop in the freezer one day before! But let’s say you make a batch and for some strange reason you can’t finish it all, you can keep it refrigerated in an air-tight container for up to 2-3 days. Just pop it into the oven again to heat, you can use the microwave but that may result in slightly soggy pastries.

Ingredients

  • 1 sheet of puff pastry
  • bunch of asparagus (around 700g)
  • 1 tbsp olive oil
  • 46 garlic cloves (grated)
  • 6 slices vegan cheese
  • salt +black pepper
  • chilli flakes
  • 1/2 tsp maple syrup
  • 1/2 tbsp oat milk

Instructions

  1. Pre-heat oven to 200°C/392°F. Line a baking tray with parchment paper.
  2. Wash and trim the ends of the asparagus. Massage your asparagus with olive oil, salt, garlic, black pepper and chilli flakes. Cut vegan cheese slices in half – so you have 12 thin slices in total.
  3. Cut your puff pastry sheet into 6 equal squares. Place your vegan cheese in the centre at an angle. Top with a few asparagus. Fold over the pastry. Pop in the fridge for 5-10 minutes.
  4. Combine oat milk and maple syrup to make the glaze. Brush over the puff pastry. Bake for 30-40 mins or until golden! Enjoy warm!
