This Indian Moringa Drumstick Curry is one of my childhood favourites! I’ve been eating this curry from a young age and just recently found out it’s from the famous superfood Moringa! These long green Drumsticks are used in many South Asian dishes and today I’m showing you a curry that’s been passed on from my grandma (aka the best chef I know).
The recipe may seem hard to make, but trust me it is not! All you need is a few spices, tomatoes and Moringa Drumsticks which you should be able to find at any Indian fruit & veg stores, take an image from google as a reference to show the store assistants if you can’t find it!
Drink the water the Moringa was boiled in!
If you are short on time, boiling the drumsticks makes the recipe quicker, and don’t worry nothing goes to waste! I add some of the water the drumsticks are in boiled back into the curry and the rest? …I drink it! My mum told me that my 100 year old “young” great grandmother does, and I’d love nothing more than to age like her! To me, it doesn’t taste that bad it just tastes like the curry but without the seasoning. If you don’t like the taste mix it in with your favourite green smoothie!

Ingredients you’ll need for Moringa Drumstick Curry:
- moringa drumsticks
- gram flour
- canned chopped tomato
- mustard seeds
- cumin seeds
- garlic
- ground turmeric
- chilli powder
- coriander-cumin powder (or half of each)
- salt
- sugar
- fresh coriander
Eating Moringa curry
Eating this curry is different than the typical indian curry as you don’t eat the skin of the drumsticks! You simply open up the drumsticks using your hands, then scrape the insides with your teeth. I pair this curry with roti, onions, rice and vegan yogurt.
How to make Drumstick Curry:
- Wash Drumsticks and chop in quarters.
- Boil the drumsticks in water and a pinch of salt for around 8-11 minutes. Don’t drain the water out!
- In another pan heat oil and temper the mustard seeds.
- Once the mustard seeds start to pop add in the cumin seeds and cook until fragrant.
- Add garlic and cook for a few seconds or until the raw smell goes.
- Mix in the chopped tomatoes, salt, turmeric, chilli and coriander cumin powder. Cook for 5 minutes.
- Add the boiled drumsticks into the pan (without the water). Mix and cook for 3 minutes.
- Pour 1 cup of the moringa boiled water and sugar. Cook for another 3 minutes.
- Sprinkle gram flour over the curry (don’t mix). Cover pan with a lid and cook for 4-5 minutes.
- Add fresh coriander, then mix. Cook for 9-11 minutes with the lid on. Stirring occasionally.
- Enjoy!

Boiling Drumsticks
- 4–5 cups chopped moringa drumsticks
- 1/4 tsp salt
Moringa Drumstick Curry
- 2 tbsp oil
- 1 cup gram flour
- 1/2 cup canned chopped tomato
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 tbsp grated garlic
- 1 1/2 tsp salt
- 1/4 tsp ground turmeric
- 1/2 tsp chilli powder
- 1/2 tbsp coriander cumin powder (or half of each)
- 2 tbsp chopped fresh coriander
- 1 tsp sugar
Instructions
- In a pot add cold water, moringa drumsticks and salt. Boil for [timer minutes=8] 8-10 minutes[/timer]. (Don't drain the water!!)
- Roast the gram flour in a pan for[timer minutes=5] 5-7 minutes[/timer]. Constantly mixing.
- In another pan heat oil over low-medium heat.
- Once oil is hot add mustard seeds and temper until they start to pop.
- Add cumin seeds and cook until fragrant.
- Add grated garlic and cook for a few seconds.
- Mix in chopped tomatoes, salt, turmeric, chilli and coriander cumin powder. Cook for [timer minutes=5]5-6 minutes[/timer].
- Add the boiled moringa drumsticks without the water. Mix, then cover pan with a lid and cook for 3 minutes.
- Pour 1 cup of the moringa boiled water into the pan and sugar. Cook for another [timer minutes=3]3 minutes.[/timer]
- Sprinkle gram flour over the curry (don't mix). Cover pan with a lid and cook for [timer minutes=4]4-5 minutes[/timer].
- Add fresh coriander. Mix and cook for [timer minutes=9]9-11 minutes[/timer] with the lid on. Stirring occasionally.
