How to make this delicious Vegan Indian Style Grilled Cheese:
- Grab your Aloo Paratha from the fridge, along with the green chutney and vegan cheese.
- Finely slice the onions.
- Heat up one side for the Aloo Paratha over low heat, moving occasionally with your hands.
- Once you can feel the heat through the top side of the Aloo Paratha, remove it from the heat and place it onto a plate or chopping board.
- On the heated side, spread a generous amount of green chutney, add vegan cheese, some onions, then some more vegan cheese. Fold the Aloo Paratha in half.
- Place back onto the pan and heat over low heat until the vegan cheese is melted and oozy.
- Enjoy warm!

Ingredients
- 2 Aloo Parathas (that have been made and refrigerated the day before)
- 2–4 tbsp tangy green chutney
- 4 vegan cheese slices
- 1 small onion
Instructions
- Heat one side of an aloo paratha over low-medium heat. Once you can feel the otherside has warmed up transfer onto a plate.
- With the heated side up, spread green chutney on one half, add vegan cheese, onions and a little more vegan cheese on top. Fold over.
- Transfer back onto the pan and cook both sides until warm and vegan cheese has melted. Serve warm.
