These baked masala cashews are a crowd-pleasing, delicious and dangerously simple Indian snack. Made with a few pantry ingredients, these crispy Indian spiced nuts can be whipped up within 20 minutes! Oh, and they’re naturally vegan, gluten-free and healthy!

What you’ll need to make this healthy Indian snack…
- cashews
- chickpea flour (besan/gram flour)
- rice flour
- ground turmeric
- salt
- chaat masala
- chilli powder
- baking soda
- curry leaves
- garlic granules
- olive oil
- water
How to Make Masala Cashews
Into a bowl, mix together cashews, rice flour, chickpea flour (besan/gram flour), chaat masala. chilli powder, garlic granules, ground turmeric, baking soda and chopped curry leaves.
Next, mix in the olive oil. Add 1 tbsp of water at a time to the mixture, until it starts to clump up. I used 3 tbsps in total, but you might need more/less.
Transfer onto the lined baking sheet. Using your hands, separate the cashews that have clumped together.
Bake for 10 minutes, mix, then bake for another 5 minutes.
Turn off the oven, and allow the cashews to rest with the oven door ajar for 2-3 minutes before removing.
Place on a cooling rack, and allow to cool.

- 1 cup cashews
- 1/2 cup chickpea flour ((besan/gram flour))
- 3 tbsp rice flour
- 1/4 tsp salt
- 1/4 tsp chaat masala
- 1 tsp chilli powder
- 1/2 tsp garlic granules
- 1/8 tsp ground turmeric
- 1/4 tsp baking soda
- 3–4 fresh/dried curry leaves (chopped)
- 1 tbsp olive oil
- 2–3 tbsp water
Instructions
- Pre-heat oven to 200°C/392°F and line a baking tray with parchment paper.
- Mix cashews with all the dry ingredients and chopped curry leaves. Add the oil and toss it together.
- Add 1tbsp of water at a time until the mixture starts to clump up – I used a total of 3 tbsps. Transfer onto the baking tray, separate cashews that have clumped together.
- Bake for 10 minutes, give it a mix and bake for 5 minutes more. Turn off the oven, with the cashews still inside but the door ajar for 2-4 minutes. Remove cashews and place them onto a cooling rack.
- Enjoy!
