Today friends, I’m so excited to share with you my vegan Banana Bread French Toast, yes, you heard me correct! I’m sure like me, you all love Banana Bread and French Toast, but combining the two? Sensational! This recipe is heavenly, a perfect breakfast to satisfy your sweet tooth in the mornings.
Ingredients you’ll need for Banana Bread French Toast:
- your favourite banana bread loaf- I used my Classic Banana Bread recipe for this one.
- canned coconut milk
- gram flour / chickpea flour
- maple syrup
- ground cinnamon
- vanilla extract
- vegan butter
- ground nutmeg
What kind of Banana Bread can I use?
I made this recipe with my Classic Banana Bread recipe, however you can use ANY Banana Bread recipe. You could also make this French Toast with my Marbled Chocolate Banana Bread or Raspberry Banana Bread, which I think would work fab with this recipe! You could serve the Marbled Chocolate Banana Bread with a drizzle of melted chocolate, and my Raspberry Banana Bread with some vegan whip and more berries!
Although I haven’t tried making my Banana Bread French Toast with a gluten free Banana Bread, I’m sure it’ll still work!

How to store:
Just like any french toast recipe, it’s best served freshly made and warm! However, because this is a Banana Bread French Toast recipe it’ll still taste delcious the next day, just heat it up in the oven/microwave/stove top if you want it to be warm.
Store in an air-tight container and it’ll keep in the fridge for up to 3 days.

Ingredients
- classic banana bread loaf
- 3/4 cup canned coconut milk
- 5 tbsp gram flour (or chickpea flour)
- 1 tbsp maple syrup (optional)
- 1/2 – 1 tsp ground cinnamon (optional)
- 1/4 – 1/2 tsp nutmeg (optional)
- 1/2 –1 tsp vanilla extract (optional)
- vegan butter
Instructions
- Cut your Banana Bread into roughly 1 inch thick slices.
- Add coconut milk, gram flour, maple syrup, ground cinnamon, vanilla extract and nutmeg into a bowl.
- Whisk until you achieve a smooth batter.
- Dip your Banana Bread slices into the batter for around 40 seconds per side. I like to do two slices at a time, make sure not to soak them all at once because they'll become too soggy! Only soak as many slices you can fit intoyour pan.
- Heat up your pan, and add 1/2 tbsp vegan butter. Allow your vegan butter to melt, then place your soaked Banana Bread Slice into your pan. Fry for around 2-3 minutes (per side) or until golden and slightly crispy.
- Repeat with all your other slices of Banana Bread, serve with fresh seasonal fruit (I caramalised mine) and a generous drizzle of maple syrup.
