What you’ll need to make these vegan grilled cheese croutons…


bread – I like to use wholemeal seeded bread, but any bread of your choice will work!

vegan cheese – the best type of vegan cheese to use is the block versions, I find pre-grated vegan cheese takes longer to melt.

vegan butter or margarine – I like using salted butter, but use whatever you have at home.

Toasting the bread…

Toasting the bread is super important as we want the bread to be toasted on both sides. Why? Because we want these croutons to be as crispy!

Once the slices of bread have been toasted, add vegan cheese on one slice, cover with another and now it’s ready to crisp up for a final time on a skillet.

The secret to getting vegan cheese to melt…

Heat the skillet over low-medium heat, add in the vegan butter. Once the vegan butter has melted, add your sandwich onto the skillet, cover the skillet (or pan) with a lid.

Covering the pan with a lid while the bread toasts over the stove creates a little steam, which helps the vegan cheese melt effortlessly. If you find your vegan cheese is still being stubborn, just sprinkle it with a VERY small amount of water before adding the top layer of bread.

Transforming the grilled cheese into croutons…

Just allow the grilled cheese to cool for 1-2 minutes, then cut into cubes! That’s it!

What to serve with these vegan grilled cheese croutons…

soups – I served these grilled cheese croutons with my roasted tomato basil pesto soup (don’t worry, I’m sharing the recipe soon!). As these croutons aren’t baked they’re not as crunchy as normal croutons and they will get soggy if left in the soup for a long time. To avoid this, just add the grilled cheese croutons into the soup before each bite.

Ingredients

  • 4 slices of bread
  • 12 tbsp vegan butter
  • 1 cup shredded vegan cheese

Instructions

  1. Toast the bread on the lowest setting. Add 1/2 cup vegan cheese on one slice of bread, cover with another. Then, heat 1 tbsp vegan butter on a skillet and add the sandwich. Cover with a lid, and cook until bottom side is golden, flip and repeat.
  2. Allow to cool for 2 minutes, cut into cubes and enjoy!
