What you’ll need to make Vegan Shaved Asparagus Pizza:

  • asparagus
  • olive oil
  • lemon zest
  • lemon juice
  • garlic
  • black pepper
  • salt
  • chilli flakes
  • mixed herbs

What you’ll need to make Vegan Cheesy Kale Spread:

  • kale
  • nutritional yeast
  • olive oil
  • walnuts
  • salt
  • garlic
  • black pepper
  • water

How to make the vegan Cheesy Kale Sauce:

  1. Add washed kale into a pot with a little water and salt. Cook until kale wilts and the water has disappeared.
  2. In a food processor, add olive oil, walnuts, salt, nutritional yeast, water, garlic and black pepper with the wilted kale. Blend until smooth (it’s okay if a few kale leaves look like they’ve been chopped and haven’t been blended fully!)

How to shave Asparagus:

Shaving Asparagus may seem difficult but its actually pretty simple once you get the hang of it!

  1. Simply grab one asparagus and place it onto a chopping board, then trim off the ends.
  2. Using a peeler, shave the asparagus into thin-ish slices, in the same motion you would peel carrots!
  3. After 2-3 slices, flip the asparagus around so the side you were shaving earlier is facing the chopping board. Shave 1-2 more slices. It’s okay if you have one shaved asparagus that’s a bit thicker than the others!

How to make Shaved Asparagus Pizza:

  1. Shave asparagus to your desired thickness.
  2. Toss with lemon zest, lemon juice, chilli flakes, olive oil, garlic, black pepper, tofu, mixed herbs and salt.
  3. Spread Cheesy Kale Sauce over the pizza base.
  4. Assemble the shaved asparagus over the Cheesy Kale Sauce in a uniform line.
  5. Bake for 30-40 minutes or until cooked.

FAQ’s

What if I’m Soy Free? The tofu is optional!

Can this recipe be made gluten free too? For sure! Just use your favourite gluten free pizza base recipe!

Can I use store-bought pizza bases/dough? Yuppp!

Can I make this a day ahead? You can 100% make the Cheesy Kale dip the day before, but I’d advise to shave and season the asparagus on the day!

Do I have to arrange the shaved asparagus so neatly? Nope! If you’re feeling lazy, just place the shaved asparagus over the pizza! This may result in some areas of the asparagus not cooking completely – but because the asparagus has been shaved it doesn’t really matter!

How do I store this pizza? This pizza can be stored for up to 2 days when refrigerated!

Can I eat this pizza cold? YES! I’m actually a huge fan of cold pizza, but you can of course also heat it up in the microwave for a few seconds!

Ingredients

Pizza dough

  • 240 ml luke-warm water
  • 1 pack fast-action yeast (7g)
  • 2 tsp maple syrup
  • 390 g all-purpose flour
  • 1 1/2 tbsp olive oil
  • 1/2 tsp salt

Cheesy Kale Pizza Sauce

  • 45 cups chopped kale
  • salt
  • black pepper
  • 1/2 cup nutritional yeast
  • 1/2 cup walnuts
  • 2 garlic cloves
  • 1/4 cup + 1 tbsp olive oil
  • 5 tbsp water (+ 2 tbsp more if needed)

Shaved Asparagus Topping

  • 222 g asparagus
  • 1/2 cup crumbled tofu
  • salt
  • black pepper
  • 1 tsp chilli flakes (or, to taste! )
  • 1 tsp mixed herbs
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • zest from one lemon

Instructions

Pizza dough

  1. Combine lukewarm water with maple syrup and yeast. Set aside for 5-10 minutes.
  2. In another bowl, combine all-purpose flour, salt and olive oil. Pour the wet over the dry and bring together. 
  3. Knead on a well-floured surface for 5 minutes or until dough is soft to touch.
  4. Divide dough into two and shape into balls. Grease two bowls with a little oil, and place one dough ball in each. Cover with a tea towel and allow to proof for 45mins or until doubled in size.

Cheesy Kale Sauce

  1. In a pan, add a splash of water with the chopped kale. Cook until wilted and all the water has disappeared. Once done, allow to cool slightly.
  2. Add wilted kale, salt, black pepper, walnuts, nutritional yeast, garlic, olive oil and water into a food processor and blend. (it's okay if a few kale leaves look like they've been chopped and haven't been blended fully!)

Shaved Asparagus Topping

  1. Shave the asparagus, then toss with lemon juice, lemon zest, tofu, chilli flakes, black pepper, salt, mixed pepper and olive oil. Set aside.

Assembly

  1. Pre-heat oven to 260C/500F,
  2. Punch out the air from your dough (my favourite part). Then, on a well-floured surface roll into a rough rectangle shape. Transfer onto a well-oiled baking tray. If you need to, stretch your dough to fit your baking tray.
  3. Spread around half (or slightly less) of the Cheesy Kale Sauce. Arrange the asparagus over the sauce. Bake for 15-20 minutes or until the pizza base is fully cooked!

Notes

You may have some leftover Cheesy Kale Sauce! Use it in salads, as a spread over toast, or you could even use it to make naan pizza!
