I’ll be back with more delicious vegan recipes from Veganuary 2021. Love you all!
This skillet-baked chocolate chip cookie is gooey, warm and indulgent. All you need is a few ingredients and it’s so easy to put together as there aren’t many steps. Top with vegan ice-cream for a truly decadent treat!
2. Crispy Roast Potatoes with Garlic and Thyme
These are the most crispy roast potatoes with garlic and thyme you’ll ever try! I’ve not only baked the potatoes with the garlic and thyme but infused the olive oil with it beforehand. Give this recipe a go, it’s truly the BEST.
3. Moonglet (Indian Street Food Vegan Omelette – no tofu or chickpea flour)
Moonglet is an Indian street food omelette, made with moong dal. No tofu, no chickpea flour or ‘justegg’ is needed to make this delcious, high protein and healthy-ish vegan omelette. I haven’t tried justegg myself but I’ve heard its amazing, and I discovered their star ingrediant is also moong dal!
4. Snowflake Pull-Apart Monkey Bread
Impress your loved ones with this delicious, vegan cinnamon sugar-filled Snowflake Pull-Apart Monkey Bread this holiday season.
5. Tofu Bhurji (Indian Breakfast Scramble)
Tofu Bhurji aka Indian Breakfast Scramble is a delightful, fresh and flavourful breakfast dish. I’ve made many other Tofu Scramble recipes but this is by far my favourite (I may be a little biased). It’s made with veggies, Indian spices and the protein packed tofu! This Indian Scramble can be served with chapatti, or with toast.
6. Marbled Chocolate Banana Bread
Banana bread is one of my favourite desserts, but this one is probably is my favourite flavour combo. I mean, who doesn’t love chocolate and banana together?!
Aloo Chole Biryani is a wholesome, high protein, flavourful Punjabi dish! Made with potatoes, chickpeas, rice and classic Indian spices.
Warm-up your evenings with this easy Apple Galette! Autumn is one of my favourite seasons to bake desserts. This recipe is not only vegan (obvi) but it’s also refined sugar free, I loveeee using coconut sugar in most of my baked goods because when it bakes, it melts into an almost caramel-like sauce.
This Soya Chunks Chik’un Curry takes less than 30 minutes to make! A super quick but still incredibly flavourful Indian Curry.
Does anything sound better than a slice of aloo masala toast?! This recipe is so easy to put together and I bet you have all the ingredients already! The topping options are ENDLESS but I used what I had at home and I urge you to do the same. Who said eating vegan was hard??
