Ingredients for a Fall-Inspired Dinner

  • Parsnips: The star of the dish! Pan-fried until golden and crispy, parsnips bring a naturally sweet, earthy flavour that pairs beautifully with maple syrup and smoky chipotle.
  • Maple syrup: Adds a touch of autumnal sweetness, balancing the smoky heat of the chipotle and enhancing the caramelised parsnips.
  • Chipotle: Brings a delicious smoky warmth and gentle spicy kick, giving these tostada stacks plenty of flavour.
  • Garlic: Adds a savoury depth that complements the sweetness of the parsnips and the smokiness of the chipotle.
  • Olive oil: Helps the parsnips cook until beautifully golden and crispy while adding richness.
  • Fresh thyme: Brings a lovely earthy, aromatic flavour that works perfectly with the seasonal ingredients.
  • Salt and black pepper: Essential for seasoning the parsnips and bringing all those delicious flavours together.
  • Tostadas: I make my own by baking taco shells until crispy. They provide the perfect crunchy base for stacking all the delicious layers.
  • Vegan cheese: Shredded vegan cheese creates that lovely cheesy layer between the tostadas and parsnips. I like to gently heat the shredded vegan cheese with 2–3 tablespoons of oat milk to help soften it and encourage it to melt more smoothly when baked. Different vegan cheeses melt differently, so warm it gently and stir until creamy.
  • Avocado: Adds a creamy, buttery texture that balances the smoky, spicy parsnips beautifully.
  • Fresh onion: Brings a crisp bite and a little sharpness to contrast with the sweet maple glaze.
  • Vegan mayo: A creamy drizzle over the finished stacks adds richness and a delicious tang.
  • Fresh herbs: Sprinkle over the top for a burst of freshness, colour and flavour.
  • Together, these ingredients create the perfect balance of sweet, smoky, savoury and creamy flavours, making these vegan tostada stacks a cosy, creative dinner for the autumn season.

Making the Chipotle Maple Parsnips…

Start by peeling the parsnips and giving them a good wash under cold water. Pat them dry, then cut them into medium-small pieces so they cook evenly and develop plenty of golden, crispy edges.

Heat a generous drizzle of olive oil in a large frying pan over medium heat. Add the chopped parsnips, sprinkle with a little salt and toss well to coat them in the oil. Cover with a lid and cook for approximately 30 minutes, stirring every 10 minutes to prevent them from sticking and to ensure they cook evenly. As they cook, the parsnips will soften on the inside while developing beautifully golden, slightly crispy edges. If they begin to brown too quickly, reduce the heat slightly.

Once the parsnips are tender and golden, it’s time to add all those delicious sweet and smoky flavours. Stir in the maple syrup, freshly grated garlic, chipotle paste and a small drizzle of extra olive oil. Season with a little more salt and freshly ground black pepper, then mix everything together until the parsnips are generously coated in the glossy chipotle maple glaze. The maple syrup enhances their natural sweetness, while the chipotle adds a gentle smoky heat and the garlic brings a lovely savoury depth.

Let everything cook together for another minute, stirring gently to make sure every piece is coated in the sticky, flavour-packed glaze. Be careful not to let the maple syrup burn. Once the parsnips are beautifully glazed and fragrant, turn off the heat and set them aside while you prepare the remaining ingredients for your vegan tostada stacks.

Homemade Tostadas with Soft Tacos

Making your own crispy tostadas at home is surprisingly easy, using soft tacos and a little olive oil to create the perfect crunchy base for these vegan Chipotle Maple Parsnip Tostada Stacks.

Start by lightly brushing olive oil over both sides of the soft tacos, ensuring they’re evenly coated to help them crisp up beautifully in the oven. Arrange them in a single layer on a baking tray, leaving a little space between each one. I baked four at a time to give them enough room to crisp up evenly.

Bake in a preheated oven for approximately 10 minutes, flipping the soft tacos halfway through so both sides become golden and crunchy. Keep an eye on them towards the end of the cooking time, as they can brown quickly. If they’re not quite crispy enough after 10 minutes, return them to the oven for a little longer, checking regularly to make sure they don’t burn.

Once the soft tacos have transformed into golden, crispy tostadas, carefully remove them from the oven and transfer them to a wire rack to cool. Allowing them to cool on a rack helps keep them crisp rather than trapping steam underneath. Repeat with the remaining soft tacos until you have enough crunchy tostadas ready to layer with the sweet and smoky parsnips and melty vegan cheese.

Final touches…

Now for the fun part: bringing all those delicious layers together! Vegan cheese can sometimes be tricky to melt, so I like to give it a little helping hand before assembling the tostada stacks. Add the shredded vegan cheese to a microwave-safe bowl with 2–3 tablespoons of plant-based milk, such as oat milk. Heat gently in the microwave in short intervals, stirring in between, until the cheese softens and becomes a little creamier. This helps it melt more easily when baked.

Place your crispy homemade tostadas onto a baking sheet, ready for assembly. I recommend building the stacks directly on the baking sheet, as they can be quite delicate and difficult to move once assembled. Lightly brush each tostada with a little chipotle paste for an extra hit of smoky flavour, then add a generous layer of the golden chipotle maple parsnips followed by the softened vegan cheese.

Place another crispy tostada on top and repeat the layers of chipotle paste, parsnips and vegan cheese two or three more times, depending on how tall you’d like your stacks. Finish with a final layer of parsnips and vegan cheese, ready to melt into all those delicious layers.

Carefully transfer the baking sheet to the oven and bake until the vegan cheese has melted and the stacks are heated through. Keep an eye on them as they bake, making sure the tostadas remain crisp without becoming too dark. Once the cheese is beautifully gooey, remove them from the oven and let them sit for a moment before adding the fresh toppings.

While the stacks are still warm, top with creamy slices of avocado, finely sliced red onion and fresh thyme leaves. Finish with a squeeze of fresh lemon juice to brighten the sweet, smoky flavours and balance the richness of the vegan cheese. Serve immediately with a generous drizzle of vegan mayo on top or on the side for dipping.

The result is a delicious contrast of crispy tostadas, sweet and smoky parsnips, melty vegan cheese and fresh, creamy toppings. Every layer brings something different, making these vegan Chipotle Maple Parsnip Tostada Stacks a wonderfully cosy and flavour-packed autumn dinner!
