SUMMER BERRY COBBLER

Vegan Summer Berry Cobbler. This is one of my favorite summer recipes, as it features berries that are in season. But it's just as delicious with frozen fruit any time of the year.

Ingredients

  • 3 cups of berries (1 Cup strawberries, 1 Cup blueberries and 1 Cup raspberries)
  • 1 1/2 cups plain flour
  • 2 tsp baking powder
  • 1/8 tsp pink salt
  • 1 tsp vanilla extract
  • 3 tbsp coconut oil (melted )
  • 1/4 cup maple syrup

Instructions

  1. Preheat the oven at 180°c
  2. Mash the berries slightly and set aside
  3. In a seperate bowl mix the dry ingridents toghter
  4. Whisk the wet ingridents into the bowl until smooth
  5. Lightly grease a baking dish
  6. Pour the mixture into a dish and add the mashed berries
  7. Bake for 45-55 minutes
  8. Optional Topping
  9. Serve with vegan ice-cream

Notes

Tip: I tend to find fresh berries are more sweeter but you can use frozen berries too. And if your berries taste tart add a tablespoon or two of sweetener.
