Ingredients
- 3 cups of berries (1 Cup strawberries, 1 Cup blueberries and 1 Cup raspberries)
- 1 1/2 cups plain flour
- 2 tsp baking powder
- 1/8 tsp pink salt
- 1 tsp vanilla extract
- 3 tbsp coconut oil (melted )
- 1/4 cup maple syrup
Instructions
- Preheat the oven at 180°c
- Mash the berries slightly and set aside
- In a seperate bowl mix the dry ingridents toghter
- Whisk the wet ingridents into the bowl until smooth
- Lightly grease a baking dish
- Pour the mixture into a dish and add the mashed berries
- Bake for 45-55 minutes
- Optional Topping
- Serve with vegan ice-cream
Notes
Tip: I tend to find fresh berries are more sweeter but you can use frozen berries too. And if your berries taste tart add a tablespoon or two of sweetener.
