Ingredients for these cute but spooky bat brownies:
- All-purpose flour: Provides structure and helps create brownies that are soft, fudgy, and hold their shape.
- Dutch-process cocoa powder: Gives the brownies a deep, rich chocolate flavour and dark colour.
- Granulated sugar: Adds sweetness and helps create those crisp, crackly edges.
- Light brown sugar: Adds extra moisture and a subtle caramel-like flavour for an ultra-fudgy texture.
- Salt: Balances the sweetness and enhances the chocolate flavour.
- Vegan salted butter: Adds richness, moisture, and buttery flavour to the brownies.
- Aquafaba: The liquid from canned chickpeas! It what we’re using instead of eggs!
- Vegan chocolate chips: Melt into the batter for extra pockets of chocolate throughout.
- Vegan dark chocolate: Adds intense, bittersweet chocolate flavour and makes the brownies extra decadent.
- Pure vanilla extract: Enhances and rounds out the rich chocolate flavour.
- Peanut butter: The star of the frosting! Adds a creamy texture and delicious nutty flavour that pairs perfectly with chocolate.
- Icing sugar: Sweetens the peanut butter frosting and gives it a smooth, fluffy consistency.
- Oreos: Create the perfect bat wings! Cut or break them into pieces to give your brownies their spooky bat shape.
- Googly eyes: Bring your little brownie bats to life with a fun, cute finishing touch!

Making the brownies:
Since vegan boxed brownie mix isn’t available easily, I start by making my fudgy vegan brownies.
In a large mixing bowl, whisk the aquafaba, granulated sugar, and light brown sugar with a handheld electric whisk for 3–4 minutes, until pale, thick, and slightly glossy. This step is key to achieving that signature crinkle top! Meanwhile, sift the all-purpose flour and Dutch-process cocoa powder into a separate bowl and whisk in the salt. Toss the vegan chocolate chips with 1 tablespoon of the flour mixture and set aside.
Using a bain-marie, gently melt the vegan salted butter and dark chocolate together until smooth and glossy. Pour the melted chocolate mixture into the whipped aquafaba and sugar, add the vanilla extract, and gently fold until combined. Add the remaining flour mixture and fold until just combined, then fold through the chocolate chips.
Pour the brownie batter into a square baking dish lined with foil and spread it into an even layer using an angled spatula or the back of a spoon. I prefer using foil because it makes the brownies easier to lift out once cooled, giving you lovely, clean slices.

Bake for 32–35 minutes, checking from the 30-minute mark to avoid overbaking. A toothpick inserted into the centre should come out with a little fudgy batter and a few moist crumbs. Don’t worry if the brownies look slightly soft in the middle when they come out of the oven, as they’ll continue to set while cooling, leaving you with a beautifully fudgy centre and crinkle top!
Once baked, let the brownies cool completely before popping them into the fridge for at least 2 hours, or overnight. This helps them firm up, making it much easier to cut neat slices while keeping that deliciously fudgy centre. Once chilled, lift them out of the tin and slice into squares using a sharp knife.
All about the decorations…
Now for the fun part: the peanut butter frosting! Mix the peanut butter and icing sugar until smooth, creamy, and deliciously thick. If needed, add a tiny splash of milk to loosen the mixture until it’s perfectly spreadable.

To create those spooky little bat wings, carefully slice the Oreos in half. I love giving the edges a little crumble to make them look imperfect and a bit more delightfully spooky! Spread a generous layer of peanut butter frosting on top of the brownies then gently press in the Oreo wings and finish with googly eyes.
And there you have it: adorable little bat brownies with rich chocolate centres, creamy peanut butter frosting, and spooky Oreo wings! They’re almost too cute to eat (almost!), making them the most delicious treat to make this Halloween treat to share at parties or enjoy during a cosy night of spooky baking.
Keep stored in an air tight container in the fridge for up to 1 week.

Ingredients
- 126 g aquafaba
- 160 g granulated sugar
- 120 g light brown sugar
- 1/2 tbsp vanilla extract
- 113 g salted vegan butter
- 140 g vegan dark chocolate (or more vegan choc chips)
- 46 g Dutch process cocoa
- 160 g all purpose flour
- 1/2 tsp salt
- 120 g vegan chocolate chips
- 1 cup smooth peanut butter
- 1/2 cup icing sugar
- 16 Oreos
- 32 edible eye candy
Instructions
Brownies
- Preheat oven to 180°C/356°F. Line a 9-inch or 8-inch square baking pan with foil. Lightly grease the foil with vegan butter.
- Sift all-purpose flour and Dutch-process cocoa. Mix in salt. Then, take around 1 tbsp of that mixture and combine with vegan chocolate chips – I like to toss them using my hands! Set aside.
- In another bowl, add aquafaba, granulated sugar and brown sugar. Whisk with a handheld whisk for around 3-4 minutes or until it becomes white in colour and thick – kinda like meringue!
- Using the bain-marie method, melt salted vegan butter and vegan dark chocolate. Pour into the aquafaba mixture, and add in vanilla extract. Fold until well combined.
- Fold in the dry ingredients, then finally the vegan chocolate chips.
- Pour into a pre-prepared baking pan. Using an angled palette knife or the back of a spoon, even out the batter.
- Bake for 32-35 minutes. You’re going to want to keep an eye on these brownies, as everyone’s oven is different. I’d advise checking them after they hit the 30-minute mark. Then, after every 3-5 minutes check if they’re done by inserting a toothpick – it should come out with a little batter and a couple of crumbs *watch the video tutorial*
- Once they’re done baking, transfer the baking tray onto a cooling rack and allow to cool completely. Once the baking tray is completely cooled, cover the brownies with more foil and refrigerate overnight (or for at least 4 hours).
Bat decorations
- Mix the peanut butter and icing sugar until smooth, adding a splash of water if needed to create a spreadable frosting. Slice the cooled brownies into 16 squares. Cut the Oreos in half to create bat wings, then spread the peanut butter frosting over each brownie. Finish by adding the Oreo wings and googly eyes to create your spooky vegan bat brownies!
