Creamy, dreamy, comforting vegan mashed potatoes with caramelized garlic. This is the perfect side to make during this holiday season for your loved ones. Normally all the garlic is mashed with the potatoes, but I love adding a few caramelized garlic cloves on top, not only because it looks pretty but it adds another element of texture.

What you’ll need to make the best vegan mashed potatoes

  • potatoes (duhhh)
  • garlic cloves
  • olive oil
  • vegan salted butter – or unsalted
  • salt + black pepper
  • oat milk – pr a creamy vegan milk of your choice
  • fresh herbs of your choice for garnish – thyme and rosemary are my faves!

How to make this creamy vegan garlic mashed potatoes


Start with boiling the potatoes in a pot filled with cold water and a little salt. Boil potatoes until they’re fully cooked, this will take around 10 minutes.

In a small saucepan, add garlic cloves and olive oil. Cook over medium heat until the oil starts to boil, then bring down to the lowest temperature and cook until golden. Remove from heat, and with a slotted spoon remove the garlic cloves. Roughly chop up the garlic cloves (leaving around 4-5 for the garnish!). Set aside garlic cloves and olive oil until needed.

Once the potatoes are cooked, drain the water and return the potatoes back into the pot. Add in the vegan butter and start mashing. Once the potatoes are nearly mashed, add in salt, black pepper, oat milk and infused olive oil and chopped caramelized garlic.

Continue mashing until smooth. Transfer into a serving bowl, create a few swirls with the back of a spoon. Drizzle with the remaining olive oil and garlic cloves. Garnish with herbs.

Is this recipe gluten-free?

Yes, it’s also soy-free, nut-free and obvi vegan.

What if I only have unsalted vegan butter?

That’s fine! Just use a little more salt.

Can this recipe be made ahead of time?

Yes! Just store in the fridge for up to 2 days. Just reheat in the microwave or over the stovetop, and add a splash of oat milk if needed.

  • 4 tbsp salted vegan butter
  • 1/2 cup garlic cloves
  • 1/2 cup olive oil
  • 1/2 cup oat milk
  • salt (to taste)
  • black pepper (to taste)
  • thyme or rosemary (for garnish )

Instructions

  4. Transfer into a serving bowl, with the back of a spoon create swirls for the olive oil to sit in. Drizzle with the remaining olive oil (use as much as you want – I use it all). Top with the reserved caramelized garlic cloves and herb of choice. Enjoy warm!
