This vegan spinach artichoke pizza starts with homemade pizza dough, baked with a creamy garlicky cheese sauce, marinated artichokes, and wilted spinach. Once the dough has puffed up and becomes golden. Remove from the oven, and sprinkle over chilli flakes, slice and enjoy!

What you’ll need to make this vegan spinach artichoke pizza:

  • Pizza dough: you can use store-bought or homemade! I used my homemade pizza dough recipe.
  • Artichokes: for a pizza packed with flavour, use jarred marinated artichokes.
  • Spinach: a whole bag, but once cooked it’ll wilt down to around 1/2 cup.
  • Olive oil: use a good quality olive oil, this will be used as our base for the cheesy white sauce.
  • Flour: to make the cheesy white sauce, we’ll need all-purpose flour to help thicken up the mixture.
  • Plant milk: any plant milk you have at home should work. I used my all-time favourite… oat milk.
  • Herbs: dried oregano and dried basil. Just a dash, but it does the job.
  • Garlic: just a few cloves, chopped finely.
  • Chilli flakes: this is optional, but I love adding a touch of heat to this pizza before serving.
  • Vegan cheese: a block of vegan cheese, grated. Along with 2-3 tablespoons of vegan cream cheese. The vegan cream cheese is optional.

All about the spinach…


Heat pan over medium heat, pack in all the spinach. Cover the pan with a lid and cook for a couple of minutes or until all the spinach has wilted. Stirring together often.

Once the spinach has wilted, cook for a few more minutes, but this time without the lid. Cook the spinach until all the water has been cooked off.

Transfer the cooked spinach into a bowl. Set aside until needed.

Making the cheesy white sauce…

The key to this vegan pizza? It’s all in the cheesy white sauce.

In the same pan, heat the olive oil. Add in the finely chopped garlic, and cook for just under a minute. Add in the dried oregano and dried basil. Cook for a few seconds.

Add in the AP flour and cook for a minute or so, while constantly mixing to prevent the flour from burning.

Next, slowly stream in the oat milk while still constantly mixing. Once all the oat milk has been added, bring to a boil and boil for a few minutes or until the mixture becomes thicker.

Stir in the vegan cheese, along with a pinch of salt. Cook for 1-2 more minutes. Remove the cheesy white sauce from the heat, and allow it to cool.

Baking the artichoke spinach pizza recipe…

Ok, before we bake the pizza we need to assemble everything together.

Drizzle a little olive oil directly onto two baking trays. Divide pizza dough in half, and stretch both onto the baking trays. You want to gently stretch the pizza dough using your fingers until it covers the baking tray.

Divide the white cheesy sauce over both pizza doughs. Next, fold over the edges of the pizza…just like you would if you were making a stuffed pizza crust. This helps keep the cheesy white sauce on the pizza, rather than leaking onto the tray.

Top both pizzas with spinach and marinated artichokes. If using, dollop the vegan cream cheese onto the pizza.

Now onto the baking…bake for 15-20 minutes, rotating the pizza halfway.

Allow the pizza to cool slightly before serving, and sprinkle with chilli flakes.

How to store this pizza

Store this vegan spinach artichoke pizza in the fridge for 2-3 days. To reheat, place the pizza slices onto a plate and add a glass of water right beside the pizza before microwaving for a few minutes. The water will help prevent the pizza from getting soggy!

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup plain flour
  • 2 1/8 cups oat milk
  • 34 garlic cloves (finely chopped)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • salt + black pepper
  • 1/2 cup vegan cheese
  • 250 g baby spinach
  • 285 g jar of marinated artichokes
  • 1 pound store bought or homemade pizza dough (my pizza dough recipe is linked in the notes!)
  • 24 tbsp vegan cream cheese (optional)
  • chilli flakes (optional )

Instructions

  1. Preheat oven to 218°C/425°F
  2. Wilting the Spinach: Heat pan, add in spinach, cover with a lid and cook for 5-7 minutes or until it wilts and all of the water has evaporated. Transfer into a bowl.
  3. White sauce: Heat oil in the same pan, add the garlic and cook for just under a minute. Add in the dried basil and dried oregano. Cook for another 30 seconds. Add in the flour, cook for a few seconds, then slowly add in the oat milk, while continuously stirring. Bring to a boil and cook for 3-4 minutes or until thickened. Add in the vegan cheese and salt. Cook until all the cheese has melted. Remove from heat and allow to cool.
  4. Assembly: Divide pizza dough in half. Drizzle olive oil over the baking trays. Using your fingers, stretch out the pizza dough until it's pretty thin. Repeat for the second pizza. Top both pizzas with the cheesy white sauce. Fold over the ends of the pizza dough (as if you were making a stuffed crust pizza). Then, add the spinach, artichoke and vegan cream cheese. Bake for 10 minutes. Rotate. Bake for another 10 minutes. Allow to cool slightly before serving. Enjoy!
